Hawaiian Cheesecake Fruit Salad
Easy, quick and super yummy!
Ingredients
- 8 ounce package cream cheese softened
- 1 cup vanilla creamer liquid (or see substitute below)
- 1 pound strawberries (washed, crown removed, and quartered)
- 3.4 ounce package instant cheesecake pudding can substitute vanilla
- 1 20 ounce can pineapple tidbits drained
- 4 mandarin oranges peeled and separated
- 5 kiwi peeled, cut into half circles
- 2 cups mangoes chopped
- 1 banana sliced
- 1 Tbsp lemon juice
Instructions
- Whip cream cheese with an electric mixer until smooth
- Mix in dry pudding
- Mix in creamer, a little at a time (to keep from splashing)
- Mix until smooth
- In small bowl, mix banana slices and lemon juice. Coat bananas well, then drain remaining juice
- In separate bowl, mix together all of the remaining fruit
- Scoop in the cream cheese mixture, gently folding into fruit
- Gently fold the banana slices into the fruit mixture
- Serve or chill
Notes
*Make Homeade Vanilla Creamer by mixing together: 2 cups half-and-half, 14 ounce can sweetened condensed milk, and 2 teaspoons vanilla extract.
