Hawaiian Carrots

  • 4 c. thinly-sliced carrots washed, peeled
  • 3 Tbsp butter
  • 2 Tbsp dark brown sugar
  • 1/4 tsp salt
  • 3/4 c pineapple juice
  • 1 banana sliced
  • 1/2 c crushed pineapple


  • Combine first 5 ingredients
  • Cook approximately 10 minutes or until the carrots are nice and tender
  • Add pineapple and the sliced banana
  • Cook an additional 3 minutes ( or so)
  • Gently stir to glaze carrots
  • Serve hot
