Hawaiian Carrots

  • 4 c. thinly-sliced carrots (washed, peeled)
  • 3 Tbsp butter
  • 2 Tbsp dark brown sugar
  • 1/4 tsp salt
  • 3/4 c pineapple juice
  • 1 banana, sliced
  • 1/2 c crushed pineapple



  1. Combine first 5 ingredients
  2. Cook approximately 10 minutes or until the carrots are nice and tender
  3. Add pineapple and the sliced banana
  4. Cook an additional 3 minutes ( or so)
  5. Gently stir to glaze carrots
  6. Serve hot
