I’m sort of kidding – but the recipe doesn’t call for bread at all, and there aren’t any spices or ingredients that would cause me to think of it as Mexican. I’ll go ahead and file it under Mexico, even though I’m not convinced. But, it does sound very delicious – so here it is!

Note: Per the directions, I would think that this should be served on mini or slider buns of some sort.

This recipe is said to make 90 sandwiches, which is why I would assume they mean sliders or a small sandwich. So, adjust accordingly.
Mexican Cheese Sandwiches
Ingredients
- 3 lbs grated cheese (type not specified - I would use a fiesta style)
- ½ lb finely chopped green peppers
- 1 lb onion, chopped
- 1 pint minced, stuffed olives
- 16 large hard-boiled eggs
- 4 tsp Worcestershire sauce
- 1 ½ C ketchup
- ¼ C butter (recipe calls for margarine, but I always suggest butter instead)

Instructions
- Mix all ingredients together and serve as open-face sandwiches.

- This particular recipe didn't specify what bread to use. I think it would be best served on mini-buns.
