Frozen Cranberry Salad
Ingredients
- 1 ¼ Cup Cranberry-Apple Juice
- ⅓ Cup granulated sugar
- 2 Tbsp cornstarch
- ¼ tsp salt
- 2 large egg yolks, slightly beaten
- 10 oz frozen cranberry orange relish (partially thawed)
- 2 large egg whites
- ⅓ Cup instant dry milk
Instructions
- Separate eggs, and beat egg yolks slightly. Set egg whites and egg yolks aside.
- In medium pan, stir together sugar, cornstarch, nd salt
- Add 1 cup cranberry-apple juice. Stir over heat until thick and bubbly
- Slowly add half of the hot cranberry-apple mixture into the beaten egg yolks. Pour back into saucepan.
- Stir over heat additional 2 minutes
- Mix in cranberry orange relish
- In small bowl, mix egg whites, dry milk and ¼ cup cranberry-apple juice. Beat until stiff.
- Fold into egg yolk mixure
- Separate and pour into 8 molds or muffin cups lined with baking papers/cups.
- Cover. Freeze until firm.
