We may only be in the dog days of summer – but I am excited for the fall and everything that it brings! Cooler temperatures, crisp leaves, and apple flavors galore!

Pumpkin spice may be the trendiest thing – but in my opinion – apple reigns supreme.

Though, I do love Twinings of London’s Pumpkin Spice Chai Tea. One of my favorite tea flavors!

Apple Muffins Recipe

Apple Muffins

Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
Servings 12 muffins

Ingredients

Muffins

  • C all-purpose flour
  • ½ C granulated sugar
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¼ C shortening
  • 1 large egg
  • ½ C milk
  • ½ C cored, pared, and grated tart apple*

Toppings

  • C brown sugar
  • C pecans, chopped
  • ½ tsp cinnamon

Instructions 

Muffin

  • Sift together the dry ingredients
  • Cut in shortening
  • Mix in apples. Then add milk and egg
  • Completely mix together and then pour into prepared muffin/cupcake tin. Fill each section ⅔rds full
  • Mix together topping ingredients. Sprinkle over muffin mix
  • Bake at 375° approimately 25 - 30 minutes

Notes

*These instructions said "grated tarted pared" apples.  I think it would be best if they were pealed, cored, and then grated.
