Rich Butterscotch Bars

Rich Butterscotch Bars

Cook Time 25 minutes
Total Time 55 minutes
Sweet, easy, and yummy!

Ingredients

  • 1 lb brown sugar (about 2 ⅓ cups, packed)
  • 1 C softened butter
  • 2 large eggs
  • 2 C all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 C coarsely chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°
  • In saucepan, melt butter and sugar together. Once sugar is completely dissolved, remove and allow to cool until lukewarm.
  • Once buttar and sugar mixture is cooled enough to not cook the eggs, add them to the mixutree and beat thoroughly.
  • In separate bowl, combine flour, baking powder and salt. Once mixed, add to butter and sugar mixture. Incorporate thoroughly.
  • Stir in walnuts (chopped).
  • Pour into a 9x13 baking dish*.
  • Bake for 25 minutes on center rack.
  • Bars are done with they are a delicate brown and a slight dent is left when you tap the top lightly with your finger tip.
  • Remove dish from oven. Allow to cool a bit. Cut into bars while still warm.

Notes

*Original instructions call for a 10x15 baking dish.
