This bread is absolutely divine. It is so easy, moist, and absolutely the best bread – so far. With banana, pineapple, and coconut – I can’t imagine a better flavor for a summertime pitch-in.
Give this a whirl and let me know how amazing you think it is. Note that this recipe makes THREE LOAVES. So, you can cut it down if you don’t want to make that much. Or, you can always freeze the extra loaf or two.

Pineapple Banana Bread Recipe
Easy, moist and delicious!
Ingredients
Dry Inredients Mix
- 4 cups all-purpose flour
- ½ tsp salt
- 2 tsp baking powder
- 1 tsp baking soda
Butter & Sugar Mix
- 2 sticks butter, softened (or melted then cooled)
- 2 cups sugar
- 4 large eggs
- 2 ripe bananas
Remaining Ingredients
- 2 20oz cans crushed pineapple in juice*
- ½ cup sweetened, shredded coconut
Instructions
- Preheat oven to 350° and prepare 3 loaf pans
- Sift together dry ingredients in large bowl
- In separate bowl, beat together all ingredients in Butter & Sugar mix
- Add Butter & Sugar mix to large bowl with dry ingredients. Combine thoroughly
- Mix in pineapple, then coconut
- Pour into loaf pans. Bake 1 hour
Notes
*Make sure to use the juice! You could also use fresh pineapple - just crush it and add pineapple juice.
