I love that this is a simple and quick recipe, utilizing a baking mix. But, you can absolutely put together your own gingerbread mix and use it for this recipe.

The ingredients listed for this were the gingerbread mix, lemon peel, and lemon juice. The instructions stated “prepare gingerbread mix to package directions, using only one cup water and adding lemon juice”. I’ve updated the ingredient list below as well as the instructions so that it is more clear and uniform.

I suggest purchasing a gingerbread mix that is intended for cake, and not cookies.

Lemon Gingerbread Muffins

Ingredients
  

  • 1 14 or 14½oz gingerbread mix
  • 3 Tbsp lemon peel, grated
  • 1 Tbsp lemon juice
  • 1 Cup water
  • 1 large egg

Instructions
 

  • Preheat oven to 350°
  • Prepare a 12-cup muffin/cupcake pan
  • Mix together the Gingerbread mix, water, egg, lemon juice
  • Pour into muffin cups
  • Sprinkle with zested lemon peel
  • Bake apporixmately 15 minutes
