Ingredients
  

Batter

  • 1 bright yellow banana I don't like to make anything with a banana that has started to brown
  • 1 ¼ C all-purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 large egg
  • C granulated sugar
  • ¼ C milk
  • ¼ tsp vanilla
  • ¼ C butter melted

Toppings

  • syrup
  • whipped cream
  • slices of banana
  • walnuts finely chopped
  • butter

Instructions
 

  • In large bow, mash banana with a potato masher.
  • Mix in egg, and sugar. Stir until everything is thoroughly combined.
  • Stir in milk, vanilla and melted butter
  • Mix in flour, baking powder, baking soda, and salt. Stir until combined.
  • Set aside and allow batter to rest 15 minutes
  • In skillet, melt butter over a medium heat. When skillet is hot, spoon in approximately 1/3 C of batter. This makes one pancake. (You can add a little more if you'd like a larger pancake!)
  • Cook until bubbles begin to appear on the top of pancake. About 3 -4 minutes. Flip pancake and cook an additional 2 - 3 minutes.
  • Serve with butter, syrup, and, whipped topping, slices of banana, and chopped nuts.
