Anything made with persimmon just sounds fun to me! It’s such a fun, and – in my opinion – vintage word and ingredient.

Persimmon Pudding Recipe

Persimmon Pudding

Ingredients
  

  • 1 Cup persimmon pulp
  • 1 large egg
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 Cup milk
  • Cup sugar
  • 2 tsp baking powder
  • ¼ tsp cloves
  • flour (amount not given. Only states "for batter like cake dough". )* See my notes

Instructions
 

  • Preheat oven to 350°
  • Prepare square baking dish (If you double the recipe, use 9x13. Some people also use round cake pans)
  • Mix together persimmon pulp, egg, salt, and sugar. Beat well
  • Mix in remaining ingredients
  • Bake approximately 1 hour

Notes

*In all of my research, it looks like the amount of flour can be unique to the consistency you prefer.  I suggest using up to a cup of all-purpose-flour.  Slowly add until you reach the consistency you want.
