I’ve tried many different meatloaf recipes over the years, but none yet that used oatmeal as a binder.

To make meatloaf, you will always need a binder to keep that loaf look. I have only used bread, breadcrumbs, and crackers as my binders. So, this recipe for how to make meatloaf in the What’s Cooking in the Scotland Community book caught my eye.

Though my go-to binder for meatloaf will likely remain a piece of bread – it’s good to know that I can also use oatmeal if I have nothing else.

Homemade Meatloaf Recipe with Oatmeal

Easy Meatloaf Recipe

Ingredients

  • 1 ½ lbs ground beef (don't use extra lean - or your meatloaf will be too dry)
  • ¼ Cup onion, chopped
  • 2 eggs beaten
  • 1 Cup tomato juice
  • ¾ Cup uncooked oats
  • 2 tsp salt
  • ¼ tsp pepper

Instructions

  • Preheat oven to 350°
  • Prepare baking dish or loaf pan
  • Thoroughly combine all ingredients in large bowl
  • Form into a loaf in baking pan
  • Bake approximately 1 hour. If not up to temperature, bake in additional 5 minute incrimints up until total cook time is 1 hour and 15 minutes.

Meatloaf FAQ

Can meatloaf be made ahead of time?

Yes! You can definitely make meatloaf ahead of time. It stores nicely in the refrigerator for up to one week and can be reheated either in the oven or microwave.

When making meatloaf, do you cover it?

No. You should leave the meatloaf uncovered while it is cooking. This allows the meat to cook to the proper temperature for ground beef.

Why meatloaf crumbles?

Your meatloaf may crumble into pieces if you did not use a binder, or did not use enough binding agents. Be sure that your binder (eggs with – oatmeal, crackers, bread crumbs, or bread) has been thoroughly distributed throughout the meatloaf mixture.

How to make meatloaf without a meatloaf pan?

It’s easy to make meatloaf without a loaf pan. Any oven-safe dish with walls should work. Make sure that you’ve used enough binding agents and spread them thoroughly through the mixture. Then form your meatloaf into that loaf shape. It may be a little slippery and relax just a bit, but it should generally keep its shape. You can also try smaller casserole dishes if you do not have a bread loaf pan.

How long to cook meatloaf

Generally speaking, you’ll need to cook anywhere from 60 – 115 minutes at 350 for 1 1/2 pounds of ground beef.

Is meatloaf easy to make?

Yes! It is one of the most simple recipes to throw together. As long as you’ve added a binder, and your favorite spices – you’ll easily create a delicious meal.

Is there a meatloaf dressing?

You can make a brown gravy (my preferred topping) to serve with the meatloaf, or you can bake it with ketchup over the top.
