Stuffed potato cakes is a quick and yummy snacks or side dishes made by combining mashed potatoes with various ingredients such as cheese, ground beef or bacon, and spices.

The mixture is formed into patties or cakes, which are sometimes coated in breadcrumbs and fried until crispy. We’re skipping the breadcrumbs on this recipe – but feel free to add them in if you’d like!

    Delicious patties made from mashed potatoes, ground beef or bacon and mixed with onion, garlic, and cheese then fried until crispy, offering a delightful combination of crunchy exterior and creamy interior.

    Ingredients

    • 4 large potatoes peeled and grated
    • 1 lb ground beef or bacon!
    • 1 cup cheddar cheese, shredded
    • 1 large onion finely chopped
    • 2 cloves garlic minced
    • 1 tsp paprika
    • Salt, to taste
    • Pepper, to taste
    • Oil (for frying)

    Instructions

    • Grate potatoes
    • In large bowl, mix grated potatoes and salt
    • Place mixture in towle and squeeze out extra water/moisture
    • Using a skillet, warm oil over medium-high heat oil.
    • Form potatoes into patties. Place in hot skillet and fry. Turning to cook both sides until golden
    • Set potatoes aside
    • Add ground beef (or bacon) to skillet and brown. Drain excess fat
    • Stir in onion, salt, pepper, and paprika. Mix will be done when onions are translucent
    • Scoop a spoonful of beef mix and place on top of a potato patty. Spread cheese over top, and place another potato patty on top of the cheese. Press edges to seal
    • In same skillet, fry potato cakes until golden and crispy on both sides
    • Serve hot
