How to Make Oatmal Cake

Equipment

Ingredients
  

  • 1 Cup quick cook oats
  • 1 ⅓ Cup hot water
  • 1 ⅓ Cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 1 Cup brown sugar
  • 1 Cup granulated sugar
  • ½ Cup shortening
  • 2 large eggs

Topping

  • 7 oz shredded coconut
  • 1 Cup pecans, shopped
  • 1 tsp vanilla
  • ½ Cup brown sugar
  • ¼ Cup heavy whipping cream
  • 6 Tbsp butter, softened

Instructions
 

  • Preheat oven to 350°
  • In medium size bowl, soak oats in water for 20 minutes
  • In separate bowl, sift together the flour, salt, baking soda, and cinnamon
  • In separate bowl, beat sugars and shortening
  • Beat in eggs one at a time. Mix until fluffy
  • Add oatmeal and combine
  • Stir in dry ingredients
  • Pour into prepared 9x13 cake pan and bake approximately 35 minutes

Topping

  • In bowl, beat together the butter and cream
  • Mix in vanilla then brown sugar
  • Combine thoroughly
  • Stir in coconut and pecans

Broil Cake

  • While the cake is still hot, spread topping over top
  • Place cake under broiler until bubbly
