pumpkin pie spice

9-inch pie crust
Instructions
Wash, peel, and boil carrots until tender. Drain and mash like you would potatoes
Preheat oven to 375°
Place pie crust in pie plate and press into place
In a large bowl, use an electric mixer to combine eggs, sugar, cornstarch, mashed carrots, pumpkin pie spice, and evaporated milk
Beat until smooth
Pour into pie crust shell
Bake approximately 35 minutes, until set
Remove and cool
