Carrot Pie

Ingredients

  • 2 large eggs
  • ½ Cup granulated sugar
  • 1 Tbsp cornstarch
  • 1 ½ Cups cooked and mashed carrots (approximately 1 ¼ pounds)
  • 1 tsp pumpkin pie spice
  • Cup evaporated milk
  • 1 unbaked 9-inch pie crust

Instructions

  • Wash, peel, and boil carrots until tender. Drain and mash like you would potatoes
  • Preheat oven to 375°
  • Place pie crust in pie plate and press into place
  • In a large bowl, use an electric mixer to combine eggs, sugar, cornstarch, mashed carrots, pumpkin pie spice, and evaporated milk
  • Beat until smooth
  • Pour into pie crust shell
  • Bake approximately 35 minutes, until set
  • Remove and cool
