Hot Smoke Chicken Salad

Ingredients

smoked chicken, diced

celery, washed and sliced

Tbsp
onion, chopped

Tbsp
lemon juice

Cup
slivered toasted almonds

Cup
mayonnaise
½
tsp
salt
¼
tsp
pepper

Cups
potato chips, crushed (or panko crumbs)

Cup
Cheddar cheese, grated
Instructions
Preheat oven to 425°
In a large bowl, mix chicken, almonds, celery, lemon juice, and onion
In a separate, large bowl, combine mayonnaise, pepper, and salt
Combine both mixtures and gently toss
Pour into greased casserole dish
Sprinkle the crushed potato chips and then the Cheddar cheese over top
Bake 25 - 30 minutes or until it bubbles
