Rhubarb Crunch

Ingredients

Rhubarb Mix

  • 4 Cup rhubarb, washed and diced
  • 1 Cup granulated sugar
  • ¼ tsp salt

Crunch

  • 1 Cup granulated sugar
  • 1 Cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 large egg

Topping

  • Cup butter, melted

Optional

  • Whipped topping

Instructions

  • Preheat oven to 350°
  • In large bowl, mix together sugar, rhubarb, and salt
  • Place in bottom of 8x11 baking dish

Crunch

  • In large bowl, mix together sugar, flour, baking powder, salt, and egg
  • Dollop and then spread over the rhubarb mixture
  • Melt butter and sprinkle over crunch mixture
  • Bake 45 minutes, then allow to cool
  • (Optional) Top with whipped cream to serve
