Rhubarb Crunch

Ingredients
Rhubarb Mix

rhubarb, washed and diced

granulated sugar

salt
Crunch

granulated sugar

all-purpose flour

tsp
baking powder

tsp
salt

large
egg
Topping
⅓
Cup
butter, melted
Optional
Whipped topping
Instructions
Preheat oven to 350°
In large bowl, mix together sugar, rhubarb, and salt
Place in bottom of 8x11 baking dish
Crunch
In large bowl, mix together sugar, flour, baking powder, salt, and egg
Dollop and then spread over the rhubarb mixture
Melt butter and sprinkle over crunch mixture
Bake 45 minutes, then allow to cool
(Optional) Top with whipped cream to serve
