Pineapple Banana Bread Recipe

Ingredients

Dry Inredients Mix

  • 4 cups all-purpose flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda

Butter & Sugar Mix

  • 2 sticks butter, softened (or melted then cooled)
  • 2 cups sugar
  • 4 large eggs
  • 2 ripe bananas

Remaining Ingredients

  • 2 20oz cans crushed pineapple in juice*
  • ½ cup sweetened, shredded coconut

Instructions

  • Preheat oven to 350° and prepare 3 loaf pans
  • Sift together dry ingredients in large bowl
  • In separate bowl, beat together all ingredients in Butter & Sugar mix
  • Add Butter & Sugar mix to large bowl with dry ingredients. Combine thoroughly
  • Mix in pineapple, then coconut
  • Pour into loaf pans. Bake 1 hour

Notes

*Make sure to use the juice!  You could also use fresh pineapple - just crush it and add pineapple juice.
