Ingredients
Dry Inredients Mix
4
cups
all-purpose flour
½
tsp
salt
2
tsp
baking powder
1
tsp
baking soda
Butter & Sugar Mix
2
sticks
butter, softened (or melted then cooled)
2
cups
sugar
4
large
eggs
2
ripe
bananas
Remaining Ingredients

20oz cans
crushed pineapple in juice*
½
cup
sweetened, shredded coconut
Instructions
Preheat oven to 350° and prepare 3 loaf pans
Sift together dry ingredients in large bowl
In separate bowl, beat together all ingredients in Butter & Sugar mix
Add Butter & Sugar mix to large bowl with dry ingredients. Combine thoroughly
Mix in pineapple, then coconut
Pour into loaf pans. Bake 1 hour
Notes
*Make sure to use the juice! You could also use fresh pineapple - just crush it and add pineapple juice.
