Preheat oven to 425° and place cast iron skillet in oven to heat
Mix all ingredients together thoroughly
While skillet is heating in the oven, drop the bacon grease into the skillet to melt for approximately 1 minute (not too long!)
Remove iron skillet from oven and brush bacon grease around the inside of the skillet, including the walls
Pour cornbread mixture into skillet
Bake approximately 25 minutes or until top is turning a golden brown and the center is cooked.
