Pecan Upside Down Cake

Cake Batter

  • A box of vanilla cake mix
  • 1 Cup water
  • 1/2 Cup oil or melted cooled butter
  • 3 large eggs
  • 3 Tbsp sour cream

Pecan Topping

  • 1/2 Cup brown sugar
  • 1/4 Cup corn syrup
  • 1/2 Cup melted butter
  • 1 Cup chopped pecans
  • A pinch of salt

Instructions

  • Preheat oven to 350 degrees Farenheit
  • In large bowl, beat butter, brown sugar, corn syrup, and salt until all sugar has dissolved
  • Stir in pecans
  • In a separate bowl, combine cake mix, butter, water, sour cream, and eggs with a mixer or whisk until smooth
  • Prepare a 10-inch bundt pan with butter, oil, or spray
  • Pour sugar and pecan mixture into bundt pan
  • Pour cake batter over the pecans
  • Spread evenly
  • Bake approximately 45 minutes or until a toothpick inserted comes out clean
  • Remove from oven, and place on a rack to cool
  • Do not flp pan until cooled at least 10 minutes
  • Place a serving plate or cutting board on top of bundt pan, and flip pan over - allowing cake to slide out onto the plate or board
  • To loosen pecans, tapping the bottom of the bundt pan may help
