Skillet Chicken Fajitas

Ingredients

  • 1 lb chicken breast thinly sliced
  • 1 large bell pepper thinly sliced
  • 1 large red bell pepper thinly sliced
  • 1 large yellow bell pepper thinly sliced
  • 1 small yellow onion thinly sliced
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 1/2 tsp sugar
  • 1/4 tsp cumin
  • 1/4 tsp crushed red pepper
  • 1/8 tsp cayenne pepper
  • 2 Tbsp oil for cooking
  • Additional toppings: sour cream and guacamole sauce

Instructions

  • In large bowl, mix together onion powder, chili powder, garlic salt, paprika, sugar, cupin, crushed red pepper, and cayenne pepper
  • Add chicken slices, and mix
  • Set aside
  • Over a medium heat, warm cast iron skillet
  • Add 1 Tbsp oil, once warmed then add onion and bell peppers. Saute 10 minutes
  • When tender, remove from skillet and set aside
  • Add remaining oil and cook chicken until no longer pink. Approximately 7 minutes
  • Stir in bell pepper mix
  • Simmer approximately 3 minutes
  • Serve with warmed tortillas and top with shredded fiesta-style cheese blend
