Lemon Gingerbread Muffins

Ingredients

  • 1 14 or 14½oz gingerbread mix
  • 3 Tbsp lemon peel, grated
  • 1 Tbsp lemon juice
  • 1 Cup water
  • 1 large egg

Instructions

  • Preheat oven to 350°
  • Prepare a 12-cup muffin/cupcake pan
  • Mix together the Gingerbread mix, water, egg, lemon juice
  • Pour into muffin cups
  • Sprinkle with zested lemon peel
  • Bake apporixmately 15 minutes
