Frozen Cranberry Salad

Ingredients

  • 1 ¼ Cup Cranberry-Apple Juice
  • Cup granulated sugar
  • 2 Tbsp cornstarch
  • ¼ tsp salt
  • 2 large egg yolks, slightly beaten
  • 10 oz frozen cranberry orange relish (partially thawed)
  • 2 large egg whites
  • Cup instant dry milk

Instructions

  • Separate eggs, and beat egg yolks slightly. Set egg whites and egg yolks aside.
  • In medium pan, stir together sugar, cornstarch, nd salt
  • Add 1 cup cranberry-apple juice. Stir over heat until thick and bubbly
  • Slowly add half of the hot cranberry-apple mixture into the beaten egg yolks. Pour back into saucepan.
  • Stir over heat additional 2 minutes
  • Mix in cranberry orange relish
  • In small bowl, mix egg whites, dry milk and ¼ cup cranberry-apple juice. Beat until stiff.
  • Fold into egg yolk mixure
  • Separate and pour into 8 molds or muffin cups lined with baking papers/cups.
  • Cover. Freeze until firm.
