Coconut Caramel Pie

A delicious, sweet treat any time of year!

Ingredients

  • 2 large eggs
  • ½ Cup granulated sugar
  • 1 7 oz bag* coconut
  • 1 ½ Cup Karo Syrup
  • ½ tsp salt

Instructions

  • Preheat oven to 375°
  • Mix together, eggs, sugar and syrup
  • add coconut and salt. Combine thoroughly
  • Pour into unbaked 9-inch pie crust
  • Bake 35 minutes

Notes

*The recipe calls for 1 can coconut.  I assume that when this recipe was developed, something like Baker's Southern-Style Canned Coconut or the like was available.  Which appears to just be canned, flaked coconut.  Baker's still makes coconut - but it is now available in a bag as opposed to a can.
